Three things, in order of how much difference they make.
The Giza plateau, the Grand Egyptian Museum, Coptic Cairo, Islamic Cairo and the Khan — these are five separate half-days, and most Egypt itineraries compress them into one and a half. On a seventeen-day trip they get the time they need, and the Grand Egyptian Museum alone rewards a full one.
On a short tour the cruise is a way of getting between temples. Over seventeen days it becomes the rest of the trip, which is why the choice between a dahabiya, a felucca and a standard cruise boat matters more here than on any shorter itinerary.
The White Desert, Siwa, the Red Sea reef — these are what shorter itineraries cut first. They are also the parts guests describe most vividly afterwards, because they are the least like what they expected Egypt to be.

Not if the itinerary is built for it. What makes a long Egypt trip tiring is not the length but the number of early starts, internal flights and hotel changes packed into it. Seventeen days done properly has fewer moving days than twelve days done badly. All four itineraries here hold you in one place for several nights at a time, on the cruise and on the coast.
A second landscape. Twelve days covers Cairo, the Nile and one extra element. Seventeen covers Cairo properly, the Nile at a real pace, and both a coastal stay and a desert leg. If you only ever visit Egypt once, this is the length that leaves nothing out.
Start with the Nile. If you want a small sailing boat with cabins and quiet moorings, take the dahabiya itinerary. If you want the Nile open and simple and you sleep well outdoors, take the felucca. The land portions are broadly similar across all four.

October to April. A seventeen-day itinerary will have you in Upper Egypt and, on two of these packages, in the Western Desert, and both are severe in high summer. February and March give the best balance of weather and crowds.
